Problem
The water content in pasta, as well as in other industrially processed foods, is of considerable importance for their quality and durability. In order to ensure high levels of quality of the finished product, avoiding wastes during production and/or after-sales complaints (which create not only economic but also image damage), it is necessary to control the percentage of moisture in the product (not the surface).
The measurement of this parameter is currently obtained by taking a sample which has been shredded and subsequently analysed using laboratory instruments.

RAM offers a solution able to control in line the percentage of moisture of the “pasta” product after drying, before packaging.
The system (IoT-Internet of Things solution) can be integrated into the production plant, installing suitable sensors able to measure the internal moisture of the product, without creating delays in production.
The data collected in real time are correlated with the process data of the previous production phases, in particular the dryer and its constituent phases: wrapping, drying and stabilisation.
Each of these phases is characterized by set point for temperature and moisture and relative production values.
The technologist, with the support of “manual” reliefs, has the possibility of correcting the moisture of the product, by acting on the heat and on the air circulation (opening/closing the shutters).
These quantities, modified by human intervention, complete the “technological/productive” situation and contribute to determining the moisture downstream of the production line, before packaging.
The system allows you to remotely view process data from upstream to downstream, giving the technologist an overview of the status of the plant and the effects downstream of the made choices.
Service
RAM offers a new service associated with the new product. The proposed solution provides a decision support system for plant technologists, who can assess and understand the reasons of product moisture before packaging (each process data and each human correction/set point action will contribute to determine the value of downstream moisture). Through artificial intelligence techniques, the technologist will be suggested the most suitable solution.
